In the summer, I’m always looking for ways to make interesting salads to take on trips. I typically don’t enjoy spending a lot of time in the kitchen when the warm sun is shinning, I much prefer to be outside walking or reading or enjoying time with friends so having a quick, easy meal to throw together before heading to work is essential. This salad is the perfect fresh, quick, delicious meal for your busy summer self.
Ingredients:
serves 2
1 lb Bay Shrimp
1 Cucumber, Chopped
1/4 cup Diced Onion
2 Celery Stalks, Chopped
1 Tbsp Olive, Grapeseed or Flax Oil
1/2 Lime
1/2 Lemon
1 Clove Garlic, Minced
1 Tbsp Finely Chopped Cilantro
1/2 tsp Pepper
Mix together shrimp, cucumber, onion and celery
Squeeze the juice from the lime and lemon along with the oil over the mixture and toss
Season with cilantro and pepper
Let marinade in the refrigerate for at least 1 hour and serve cold
Enjoy this salad on the plane, in your hotel room or at home on a hot summer day. Be sure to keep it nice and cold so the shrimp stays fresh.
