Fall Harvest Granola Bars

Ingredients

  • 2 Cups Rolled Oats
  • 1/2 Cup Almond Flour
  • 1/4 Cup Pepitas
  • 2 Tbsp Sunflower Seeds
  • 2 Tbsp Flax Meal
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Sesame Seeds
  • 1/4 Cup Diced Dried Apricots
  • 1/4 tsp Baking Soda
  • 1/2 tsp Cinamon
  • 1/8 tsp Sea Salt
  • 1/3 Cup Coconut Oil
  • 1/4 Cup Honey
  • 1/4 Cup Coconut Sugar
  • 1 tsp Vanilla

Instructions

  1. Pre-heat oven to 350 degrees
  2. In a medium bowl, combine all dry ingredients.
  3. Mix in wet ingredient until evenly coated (mixture will be loose and crumbly)
  4. Pour mixture into a parchment lined 8X8 baking dish and press down firmly and evenly.
  5. Bake for 20 minutes, until golden brown
  6. let cool
  7. Once cooled, pull the parchment out of the pan, removing the granola bars.
  8. With a sharp knife, cut into desired bar size.
  9. Store in an air tight container or freeze and save for later.

Recipe Notes

*Consistency of these bars may change according to the climate they are made in. They may be crunchier in more dry climates and softer in more humid climates.
