Pre-heat the oven or grill to 400 degrees
Coat chicken in a light amount of oil.
Sprinkle salt, pepper and a generous amount of Italian Seasoning over both sides of the chicken then top with another light coat of oil.
Bake or grill until the chicken is no longer pink (20-30 minutes depending on size.)
Let the chicken rest for about 10 minutes then slice, let cool and store in an air-tight container in the fridge.
This chicken is a great for a quick snack or as an addition to any salad.
