Peanutbutter Chocolate Chip Bars

Ingredients

  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla
  • 2 cups rolled oats
  • 1/4 cup almond or oat flour
  • 1/4 cup dried quinoa
  • 1/4 tsp baking soda
  • dash salt
  • 1/2 cup chocolate chips

Instructions

  1. Pre-heat the oven to 300 degrees.

  2. Line an 8x8 baking dish with parchment paper or heavily grease.

  3. Place peanut butter and honey in a large, microwave safe bowl and warm for 30 seconds.

  4. Stir in applesauce and vanilla.

  5. Mix in remaining ingredients.

  6. Transfer to the 8x8 dish, cover with parchment paper and press the mixture down evenly into the dish. Using something heavy like a meat is especially helpful to use for this.

  7. Remove top parchment and place the bars in the oven.

  8. Bake for 15-20 minutes, until golden brown.

  9. Let cool and cut into 12 bars.

  10. Store in an airtight container.
