Italian Chopped Salad

  • 1 medium cucumber chopped into bite-size chunks
  • 1 16.5oz can large pitted black olives, halved
  • 1 16.5oz jar marinated artichoke hearts
  • 1 red bell pepper chopped into bite-size chunks
  • 2 Tbsp finely diced red onion
  • 1 clove garlic minced
  • 2 Tbsp of olive oil
  • 1 Tbsp red wine vinegar
  • 2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper


  1. Combine all ingredients and mix well.

Preparation Tips:

Prepare salad directly in packing container to save on clean up time.

Optional: for a complete meal, add  Seasoned Chicken.

Packing Tips:

Pack salad in a container with a twist top or snap lid.

Keep cold.
