Summer Berry Salad
- raw pecans
- Parmesan or goat cheese optional
Lemon Pepper Dressing:
- 3 Tbsp olive oil
- 2 Tbsp lemon juice
- 2 tsp honey or agave nectar
- 1/2 tsp lemon rind
- 1 clove garlic crushed
- 1/4 tsp black pepper
- 1/8 tsp sea salt
Prepare the Lemon Pepper dressing by whisking all ingredients in a bowl or blending it in a blender or bullet.
Top greens with berries, pecans, cheese and dressing.
Pack greens, berries, nuts and cheese in separate baggies. Place all baggies in a container with a twist or snap lid.
Pack dressing in a clean jar or container with twist tip.
When you are ready to eat, remove salad ingredients from baggie and place in container. Top with dressing.
