Sweet Potato Salad

  • 2 large sweet potatoes or yams
  • 1 red pepper diced
  • 2 tbsp diced red onion
  • 2 kale leaves finely chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup Honey Mustard Dressing more if needed


  1. Clean sweet potatoes and cut each into 4 chunks.

  2. Place potatoes into a large pot. Fill the pot with water about an inch above the potatoes. Bring the water to a boil on the stove over high heat. Cook until potatoes are fork tender but not mushy (about 8 minutes.)

  3. Once the potatoes are cooked, remove from heat and drain water. Let potatoes cool.

  4. Chop the cooked potatoes into 1 inch cubes and place in a large bowl. Season with salt and pepper.

  5. Fold in veggies, followed by honey mustard dressing.
