Ingredients
- 1 medium or large zucchini
- 2-3 TBSP pizza sauce
- 1/3 cup shreded mozzerella or alternative
- pizza toppings
Instructions

Cut zucchini in half lengthwise and scoop out the seeds with a spoon.

Spread pizza sauce evenly in the zucchini boats.

Sprinkle with cheese and your favorite pizza toppings.

Bake, covered, in an airplane oven for 20 minutes.

Packing Tips:
Prepare zucchini boats in an oven safe container with a snap lid. Pack raw to cook on the plane.
Keep cold.
Heating Tips:
You can also cook these at home and re-heat them, covered, on low heat in a mini-skillet in the hotel room.
